Mama's Homemade Pancit Malabon
This recipe was from my Mama who gave me her time to know this recipe. Which she normally cooked in Fiestas and other occasions here at home, it’s also well known food particularly in Malabon City in the Philippines.
First off, the ingredients and kitchen wares that you need to prepare are these: onion, garlic, ¼ chicken liver, ¼ ground pork, ½ pancit malabon, atsuete (annatto seeds), black pepper, food seasoning, 3 eggs, soy sauce, onion leaves and crispy pork belly. For the kitchen ware choose to use the medium or large wok, depending on the number of kilos of pancit malabon.
First thing to do is get the stainless steel wok and saute onion and garlic with the use of spatula for over 5 minutes. Don’t overheat the first ingredients and check if it’s well saute and at the same wok add the chicken liver and ground pork, make sure these two were already clean and prepared then after that, boil it put ¼ cup of soy sauce for 5 minutes until you can see it’s easy to chew or tender.
After all the side ingredients are cooked and mixed well, add pancit malabon all together with the ground pork and chicken liver and other ingredients and mix it all well for 15 minutes until you can see that pancit malabon is a bit brown from its original color while making sure the taste isn’t salty.
Until the pancit malabon and other ingredients go together, put some other spices and seasoning just like these cracked black pepper and atsuete and mix it well until all other ingredients disappear but not totally.
Mix it well and surely, set aside well cooked pancit malabon for a while and look for a casserole with any size will do. Then boil three eggs for 5 minutes and check if it’s all set. Then after you boil these eggs, cut it into a small and thin circular shape but make sure to properly use the knife with safety. At the same time, put the pancit malabon in a woven circular container also called a bilao in Tagalog. Then pick the onion leaves, crispy pork belly and cut these into small pieces then season it at the top of your pancit malabon together with these sliced eggs and put it accordingly to make it presentable in the eyes.
Then all set, you can now take delight and enjoy this very easy and mouth watering pancit malabon with your family and friends. My mama suggested that pancit malabon can be cooked on all occasions and will surely make everyone full.
